Hanging weight is the weight once the hog is slaughtered and organs are removed. This hanging weight includes the bones, head, cartilage, skin and other bits. Not all of this is edible so once removed you are left with 140-150 lbs (70-75 lbs per half) of meat for your freezer.

How Much to Order
We are often asked, "How Much Should I Order?" Below is an outline of the standard cuts you get from a half pig order:​

Pork Chops: 30 (1" inch thick, center cut loin pork chops)

Spare Ribs: 1 roll of spare ribs

Ham: 18 pounds of ham (curing will shrink this a couple pounds)

Bacon: 7 pounds

Shoulder/Roast: 8 pork steaks and 2 roasts

Ground Pork or Sausage: 9-10 pounds
​A half pig will provide approximately 65-75 pounds of pork. This weight will fluctuate depending on the size of the pig at harvest. There are a lot of ways to customize your half with options on curing, packaging, cutting and slicing thickness and flavoring.
